The vast majority of frozen white fish, scampi and prawns sold across the UK are treated with a substance called sodium tripolyphosphate – also listed simply as E451 – a chemical better known outside the food trade for descaling industrial boilers, cleaning dairy processing tanks, and boosting the stain‑removing power of bleach . When seafood is soaked in a solution of this additive, it forces the muscle fibres to open up and hold onto far more liquid than they naturally could – typically gaining 10–25% extra weight, sometimes as much as 30%, while looking bright white, plump and firm even if it had been frozen for months or repeatedly thawed and refrozen, a practice investigators from the Food Standards Agency and consumer groups discovered some suppliers used to hide poor quality or poorly handled stock. For decades this method was almost entirely hidden from shoppers; today the law only requires listing it as “stabiliser: sodium tripolyphosphate” or “E451” without ever explaining its other industrial uses or exactly how much water has been added, and surveys have repeatedly shown that even many supermarket staff have no idea what it actually is. While approved within strict limits by the UK and EU authorities, unlike natural phosphates found in fish itself which your body absorbs at roughly 40–60%, this inorganic version is taken up by your system at nearly 100% efficiency, meaning even moderate regular consumption can easily push daily intake well above recommended levels, potentially upsetting the delicate balance of calcium and other minerals, causing nausea, stomach cramps or diarrhoea in sensitive people, and posing significant risks for those with kidney disease, heart conditions or diabetes who must strictly control phosphorus and sodium intake . To date there are no officially recorded cases of mass poisoning or fatalities linked specifically to correctly used E451, but several individual incidents of severe gastric upset reported to authorities have been traced back to batches where the chemical concentration was far too high or the soaking solution had become contaminated, and many experts argue the lack of transparency means shoppers are still effectively paying premium seafood prices for added water and a cleaning agent, with little way of knowing which products are treated unless you check every single ingredient label carefully.
