cooking more seafood that both of us enjoy AND doesn’t stink up the apartment ✨ to make this for two you’ll need: • 1.5 lbs of arctic char • 1 tsp garlic powder • 1 tsp paprika • 1 zucchini • 1 cup frozen spinach, chopped • 2 garlic cloves • 1 inch of ginger • 1/2 inch of fresh turmeric • 1.5 tbsp green curry paste • 1 can coconut milk • 2 tbsp fish sauce • salt and pepper Instructions: • Cut fish into cubes then toss in some oil with garlic powder, paprika, salt and pepper • set to air fry at 400F for 13 mins • in the meantime, prep garlic, ginger, and turmeric by grinding it all into a paste • cut zucchini into bite size pieces • set a deep pan that can hold sauce on medium heat and saute the ginger, garlic and turmeric first for a few mins, then add curry paste • let the paste also cook until fragrant just a few mins then add in coconut milk • stir in the spinach, then zucchini, and simmer for 5 mins • season with fish sauce for saltiness • pour sauce on the air fryer fish and serve with purple rice 🌾
