lemon poppyseed croissant roll 🍋🥐 i saw this exact thing on @pophamsbakery instagram and really wanted to recreate it!! the base is a lemon posset, then the filling in a lemon poppyseed pastey cream mixed with frangipane, then topped with a poppy seed italian meringue. Palestinian taboon bread 🇵🇸 I was following motaz_azaiza 's stories when i heard him speak of the difficulty of finding bread. At some point he showed videos of a bakery that was giving out bread to the locals. a day or two later a bakery (and at this point, bakeries) in gaza was bombed by Israeli occupying forces. I was curious to know what was so threating about a bakery selling bread to the palestinians, to an occupying force. I recently attended a conference full of farmers, millers and bakers in D.C where someone made a comment how the nazis would intentionally attack grain/food silos of the allied forces in an attempt to damage their food sovereignty, and leave lasting impacts on the health of the civilian population. I was curious to know what palestinian bread was like. i quickly found myself diving into a type of traditional palestinian bread called taboon bread, Khubz taboon. And where do I even start.. the whole tradition is beautiful. The type of oven that is used, called a taboon, to the tradition of using left over dough from the day before to ferment the next days bread, to keeping the oven alive for decades, to the rocks the bread is baked on that give a very specific touch to the bread, to the hand techniques in forming the dough and each bread. May we have the courage to speak up and act for our Palestinian Sisters and brothers not just in faith but humanity.
