These turned out SO GOOD omg. Hate when egg bites are dry/airy…these are perfect 🤌🏻 Ingredients * 10 large eggs * ½ cup cottage cheese * ½ cup shredded Monterey Jack cheese * ½ cup cooked turkey sausage, crumbled * 6-8 slices cooked bacon, crumbled * 2 bell peppers, finely chopped * 1 yellow onion, finely chopped * 1 tbsp chili onion oil * ½ tsp salt * ¼ tsp black pepper Instructions 1. Preheat oven to 300°F (Low & slow is KEY) 2. Sauté pepper & onion, let cool 3. Blend eggs, cottage cheese, salt + pepper until completely smooth (30–45 seconds) 4. Stir in cooled sautéed veggies, cheese, chili onion oil 5. Grease muffin tin VERY well, fill each cup about ¾ full 6. Water bath: place muffin tin inside a larger baking dish (ideally taller than the one I used lol), pour hot water into the larger dish until it comes about ½–1 inch up the sides of the muffin tin 7.
