Maple Chicken Sausage Breakfast Sandwiches 🍳🍯 these make the yummiest on-the-go brekkie or lunch 😍 Ingredients: 500g chicken mince 1-2 tbsp maple syrup or honey 1 tsp dried thyme, garlic powder & salt 1/2 tsp paprika & onion powder 1/4 tsp nutmeg & black pepper 6 eggs 6 English muffins 6 slices cheese Method: 1. Place the mince in a bowl with spices and mix to combine. Shape into 6 patties on a lined tray. Bake at 200°C for 12-15 minutes until golden and cooked through, flipping halfway. 2. Whisk/beat the eggs, yoghurt, salt and pepper together in a bowl. Pour mixture into a lined brownie tin and bake for 10 minutes until cooked through. Slice into 6 portions. 3. Slice the English muffins in half and assemble with a portion of egg, a chicken patty and slice of cheese m (optional to add an extra drizzle of honey). 4. Individually wrap and store in the fridge for up to 3 days (or freeze). Reheat in the microwave or air-fryer to serve. Sweet potato brownies are going to be your new favourite healthy dessert!! Gluten and dairy free with 10g protein per serve 😍🍫 Ingredients: 1 cup sweet potato or pumpkin puree (~240g) 2 eggs 1/4 cup nut butter 1/2 cup maple syrup 2 serves protein powder or almond meal (@Nu Harvest Supplements dc:MIRANDA15) 60g 1/3 cup cocoa powder 1/2 tsp baking powder 1 tsp vanilla extract Pinch of salt Method: 1. Preheat the oven to 180C and line a square baking tin. 2. Steam or boil the sweet potato and blend until it forms a smooth consistency. 3. Transfer the sweet potato puree into a large bowl. Whisk in the eggs, nut butter, maple syrup and vanilla until well combined. 3. Add the protein powder/flour, cocoa powder, baking powder and salt. Mix until just combined. 4. Pour the batter into to the baking tin. Optional to sprinkle over chocolate chips. 5. Bake for 25-30 minutes or until a skewer comes out clean. They will go fudgy once they cool! you guys NEED to try these easy sweet potato chipotle bowls 🤤✨🍠 sooo yum, high protein and perfect for meal prep!! Ingredients: 800g sweet potatoes, diced 1 tbsp olive oil 600g chicken, diced 1 packet @Mingle Seasoning chipotle 2 capsicums, sliced 1 onion, sliced 1 tsp balsamic glaze, optional 1/2 cup corn 1/2 cup cottage cheese (120g) 1/2 avocado, mashed Fresh coriander, to garnish Method: 1. Coat the sweet potato with 1 tsp chipotle seasoning, salt and 1/2 tbsp olive oil. Air fry for 20-30 minutes at 200°C until crispy. 2. Mix corn and cottage cheese together with 1/2 tsp chipotle seasoning, set aside. 3. Heat 1/2 tbsp olive oil in a fry pan, add chicken and remaining chipotle seasoning. Add a splash of water, cook for 10 minutes until browned. Remove from the pan and set aside. 4. Add the onion, capsicum, balsamic and a splash of water to the pan. Sauté for 5 minutes or until soft and caramelised. 5. Assemble 4 bowls with sweet potato, chicken, veggies, cheese and avocado. Garnish with coriander to serve.
