Prepping a 15lb Giant Pacific Octopus

This might be the biggest octopus cooked on social media. Blake from @rivieraseafoodclub told me one of his fishermen caught this octopus while hunting for king crabs in the Aleutian islands in Alaska. Asked me if I wanted it, so I said sure. These octopus eat king crab as their primary diet so their meat was actually very tender and tasted almost like king crab.

I wasn't expecting this kind of reaction. I bought this slab of Japanese A5 meat for the last hot pot video and decided to cut off a piece and surprise Eunice with it. I will say the wagyu tastes a lot better in shabu shabu than as a steak, plus I overcooked it too.

I first fell in love for hot pot after trying a place called Shancheng Lameizi in San Gabriel, CA when they first opened long ago. Since then I've been on a quest to try really good authentic hot pot. And recently while we were in Vegas, Eunice and I tried Copper Sun hot pot for the first time and their presentation of Japanese A5 on ice was really cool, so I had to try at home.

Eunice thought it would be a good idea if we go to the mall and I pick out an outfit for her to wear to our Valentine's dinner. Little does she know I'm also a stylist. So for those that asked me why she was wearing two shirts that night, this was why.

Wife's favorite: tomato soup with grilled cheese. For me it's usually a burger and this time I made beer battered onion rings. Superfood salad: 1/2 cup chopped kale* (not parsley) 3/4 cup quinoa (warmed up in microwave) 1/3 cup hemp seeds 1/3 cup diced bell pepper Olive oil vinaigrette: 1/2 cup olive oil 3 Tbsp red wine vinegar (or apple cider vinegar) 1 Tbsp chopped parsley 1/2 tsp thyme 1/2 Tbsp sugar (or honey, agave) Salt & pepper to taste Lightly dress the salad with vinaigrette Beer-battered onion rings: Onion ring batter 1/2 cup ap flour 1/2 tsp baking powder 1/2 Tbsp paprika 1/2 Tbsp garlic powder Little bit of salt & pepper Add beer until thick batter consistency Cut yellow onions in ~1/2 inch thick chunks and remove individual rings for onion rings. First dredge in cornstarch. Fry in oil at 375-400F. Oil has to stay hot so it doesn't get soggy. Fry a few pieces at a time to get the crispiness.

Was looking for a cute photo and found this screen recording back in 2021 when we had just started dating. I overheard Eunice talking to a friend over the phone and she said "don't give up on love." This dish is called nurungji chicken, popular in Korea but I'm not sure if any restaurant sells it in the US. It's stuffed with sweet glutinous rice and chestnuts, dates, garlic (like samgyetang) and cooked over fire. I seasoned the chicken with salt, pepper, garlic powder and paprika and smoked it for a few hours until it hit 165F internal. The sweet rice was soaked overnight but did not cook all the way through because of the lack of water, so I added some water on the hot stone and cooked for a few mins until it was done. Really enjoyed this one as you can tell. The smoked chicken with sweet rice paired with corn cheese and ramen was 👌😩

Happy birthday to my POV Wife. In the videos you see me doing the crazy stuff but what you don't see is how much Eunice does, not just as a mom but also as a wife. This channel wouldn't exist without her. Actually she's the reason this channel started in the first place. She told me she's not into watches and expensive things but I told her it's a milestone gift, so she can cherish the memories and remember where we were when it was gifted. And also that it's a birthday + Valentine bundle.

She says this is one of her favorite from me. I usually use rockfish but this time I used cod which was also good but was a little too thick. Season the fish with salt, white pepper, garlic powder, onion powder. The wet batter I use 1 cup flour, 1/3 cup corn starch, 1 Tbsp paprika, and beer. I fry the fish at about 400F oil then the temp drops a lot when you put the fish in.

POV Wife teaching me how to make injeolmi for the first time. You can find these at your local Korean supermarket (not the cookies n cream). Eunice used to sell these at her shop and the cookies and cream was something she came up with and it was the top seller. Injeolmi 400g sweet rice flour On a separate bowl mix: 350g water 30g sugar 1 tsp salt Slowly mix in the water mix to the sweet rice flour. Refrigerate the sticky dough for 1-2 hours (or longer). Steam on high for 15mins. Knead the dough by hitting it for chewy texture. Do not refrigerate after this step. Cut it into 1-1.5 inch cubes and add injeolmi powder. Making injeolmi powder: 1 cup of soybeans washed and dried. Roast the beans for ~15mins or until it browns. Let it cool then grind into fine powder. Sift to make it more fine, and add sugar to make it sweet (optional). For cookies and cream flavor: 400g sweet rice flour 15g cocoa powder (sift) The water mix: 350g water 15g sugar 1 tsp salt For the powder: 1 cup of oreo cookies with whites removed. Blend it into fine powder, sift to separate the larger chunks for topping. No need to add sugar.
