Creamy, decadent and just heavenly 😋 You NEED to try this cheesecake recipe - it’s so easy to make a quite fail proof as there’s no gelatin required. Baked cheesecake with blueberry topping Ingredients: Base - 1 packet (400g) digestive biscuit - 1/2 tsp ground cinnamon - 100g melted butter Cheese layer: - 500g cream cheese - 2 tbsp plain flour - 1 tbsp vanilla extract/ imitation - 1/2 tsp salt - 1 1/4 cups sugar - 125 g sour cream - 3 eggs Blueberry sauce - 1 cup frozen blueberry - 2 tbsp sugar Mango passion sauce - 1 cup fresh or frozen mangoes - 1 tbsp sugar - 3 tbsp passion fruit pulp Method: Biscuit Base 1. Preheat oven to 160°C. 2. Blitz biscuits in a food processor until fine crumbs form. 3. Add melted butter and cinnamon, then blitz until fully combined. 4. Press the mixture firmly into the base of a springform tin, pressing slightly up the sides. 5. Set aside while you prepare the filling Cheesecake Filling 1. Using a mixer, beat the cream cheese until smooth and lump-free. 2. Add flour, vanilla, sugar, sour cream, and salt. Mix just until combined. 3. Add eggs one at a time, mixing briefly between each addition. Do not over-beat. 4. Pour the filling over the prepared biscuit base. 5. Bake for 45 minutes to 1 hour: • 45 minutes for a wider tin • Up to 1 hour for a smaller/deeper tin 6. The cheesecake is ready when the centre is just firm and similar in texture to the edges when gently touched. 7. Turn the oven off and allow the cheesecake to cool inside with the door slightly open. 8. Once fully cooled, refrigerate for at least 4 hours or overnight. Blueberry or Mango Topping 1. The moment I have been looking forward to over the past month and can’t believe I have finally reached 😭 Alhamdillah Alhamdillah Alhamdillah! I have completed the memorisation of Surat AlBaqara - the first and longest surah in the holy Quran! You see, as a child I did memorise various surahs from juzu Amma and juzu Tabarak, but I didn’t properly intend to start memorising the book of Allah swt until I finished high school. In the months following sitting my HSC exams, I made the intention and actively started memorising Surat Al Baqara. I didn’t know of the proper way to do it - I would just open the Quran, read and repeat over and over until I saved the verses in my memory. I didn’t have a teacher to read to in order to fix my mistakes, I didn’t know any tajweed rules but I knew I wanted to memorise the worlds of Allah swt. I clearly remember that year we went to Jordan during the holidays - I would leave the family in the living room and go to my Grandparent’s salon (you know, the one you’re not supposed to enter) and attempt to memorise. By the end of it, at the age of 18, I had memorised the first juzu of the Quran.. When uni started and life got busy again, unfortunately I didn’t continue with memorisation nor did I revise what I had memorised, so naturally over the years I had forgotten it all 😔 Life happened, I got married, had kids.. and for some reason we believe these are commitments that hold us back from having a relationship with the Quran. I neglected the book of Allah swt and became one of those who only reads it in Ramadan. Moving forward to October of 2023 - when we witnessed the worst atrocities in my beloved G*z* - I spent a lot of time reflecting on how they manage to memorise the Quran despite the circumstances they’re in, while we live in comfort and don’t even bother.. G*z* re-aligned my heart to that which I was yearning for, from a very long time ago. I made the intention to start memorising again - this time I know my tajweed (kind of need a refresher) and signed up with a teacher who can overlook the process and hold me accountable. I memorised the first juzu then Ramadan came and I was unable to schedule in those classes within the month, so I stopped. The break was supposed to be temporarily but ended up dragging till the end of the year and sadly I didn’t continue memorising nor did I actively revise what I memorised.. January 2026, I started @rq.Sydney ‘Albaqara bootcamp’ intensive in an attempt to restart this journey. It was the most amazing thing I’ve ever done in my entire life! Finally, after sooooo many years, I walked out memorising Surat Al Baqara (2.5 juzu of the Holy Quran) 😭 انه لكتاب عزيز It’s an honourable book If you honour it, it’ll honour you, if you neglect it, it will neglect you Ya Rab make me from those who honour your book - make me from those who carry it, and not only memorise it. Ameen! May Allah swt give this sweetness to everyone who wants it and is striving for it 🥹
Lotus biscoff & (non boycott) Nutella lasagne! The dessert I made in 2020 and went mega viral - I totally understand why 😋 I had this dessert on my feed but removed it for reasons I’ll share soon. So for those who’ve been asking me where the video recipe is, here’s a new video for y’all 😉 Dessert lasagne Ingredients: - 3-4 packets biscoff or ripple biscuits (depends on tray size) - 600ml thickened cream/ heavy cream/ double cream - Dash of vanilla - 1 tbsp sugar - Half a jar biscoff spread or hazelnut spread Method: - Place cream, sugar and vanilla in a bowl and whip till soft peaks form - Melt biscoff spread or hazelnut spread in the microwave until saucy, about 20-30 sec - Layer biscuits at the base of tray - Place a layer of cream over the biscuits, then drizzle spread on top - Repeat steps till you achieve the amount of layers you desire with the final layer being cream - Place some spread in a piping bag and pipe lines on top of cream. Use a skewer to create a pattern (pushing those lines up then down) - Refrigerate for 6 hours* or overnight, and enjoy!! - *If you’d like to eat it sooner, dip the biscuits in milk or coffee before layering (they’ll soften faster) #biscofflasagne #biscofflover #viraldessert #sydneyblogger
