Filipino Longanisa Quesadilla 🇵🇭 This is the video I was recording in the picture I posted on my stories and Facebook yesterday. Cooking on my apartment balcony. Proving that great content doesn’t need an epic backyard or kitchen. Just a vision and an amazing end product. Smoked Braised Oxtails One of my favorite things to smoke for dinner is oxtails. They’re rich, comforting, and perfect over polenta, mashed potatoes, or a bowl of rice. When you give them hours of low smoke and finish with a deep braise, the flavor gets next-level. For this cook I ran @Bearmountain BBQ Old Fashioned Blend pellets, and they are perfect for beef like this. This blend is made from authentic bourbon barrels with orange and cherry hardwoods, creating a bold sweet-smoky profile with warm bourbon notes, bright citrus, and subtle cherry sweetness. That flavor works insanely well with oxtails. After hours in the smoker, the meat absorbs a deep bourbon-style smokiness that adds warmth and richness, while the citrus and cherry bring a subtle sweetness that balances the heavy, collagen-rich cut. The result is smoky, slightly sweet, deeply savory oxtails that taste like they’ve been cooking all day… because they have. Another thing I love about @bearmountainbbq pellets is they’re made from 100% all-natural hardwood with no fillers or additives, which gives you a clean, consistent smoke and lets the meat and rubs shine. Oxtails already have tons of collagen that melts down into an incredible sauce during the braise, and the Old Fashioned Blend adds a layer of smoke that takes the whole dish to another level. Just make sure you cook plenty… because there’s never as much meat on those bones as you think 😅🔥 Instructions: 1. Smoked on my @YoderSmokers YS640S at 225F for 4hrs. 3. Braised with @FOND Regenerative Beef Bone Broth, garlic, rosemary and thyme for 2-3hrs. 4. When they are fall off the bone, they are done.

I had no clue what flavor direction I was even going for, I just started throwing things together and hoped for the best. I pre-cooked the crust to try to get it extra crispy because most of my pizzas end up a little soft. Came out pretty good though… crispy, spicy and actually pretty damn delicious. Fish Fried Chicken Wings Have you ever had fish fried wings? Me either and this should be a thing if it ain’t. When the fish fry is seasoned well it makes for uniquely delicious and crunchy fried chicken. I ain’t even mad at these. Makes me wanna fish fry everything! Ingredients: • 1-2 Chicken wings • @Tony Chachere Fish Fry • @tonychacheres More Spice Creole Seasoning Dredge: • 1 egg • 1/4 cup milk • 2 tbsp @tonychacheres hot sauce Instructions: 1. Add the dredge ingredients to a small bowl and whisk well. 2. Add fish fry and seasoning to a ziplock back and mix. 3. Place chicken in the dredge and let sit for 15min then remove and place into ziplock and mix well. 4. Fry at 300F for 6-8min or until internal is 165F then remove. 5. Bump up the oil temp to 350F then place wings back in for another 1-2 minutes. 6. Serve with hot sauce and lemons then enjoy🤙🏽 #fishfry #friedchicken #chickenwings #easyrecipe #recipeideas

Place on smoker at 300°F for about 1 hour, or until bacon is rendered. 5. Brush on BBQ sauce and let it tack up for 10 minutes. 6. Drizzle with Bacon Aioli and sprinkle on bacon crumbles. Have you ever had your favorite pasta sauce - on wingssss?? This Cajun Bacon Alfredo sauce is my new go to sauce. Not only is it great on wings but toss some noodles in with it or dip a bread stick and it would be your new go to also!! And eating these wings on game day is an easy win! Appreciate @tfti.bbq for coming over and making these with me. His Spicy Garlicky Cajun Honey Rub was the perfect flavor booster. Ingredients: 2lbs of wings 2 cups of heavy cream 1 1/4 cup fresh grated Parmesan 1lbs chopped cooked bacon 2 tbsp butter 5 tbsps Spicy Garlicky Cajun Honey Rub 2 Tbsps minced garlic Step 1) Prep your wings with with 2 Tbsps of rub, we did it a @bbq_dripez Prep Tub to contain the mess and easy transport to the grill. Toss in the smoker at 375* for 45 minutes or until cooked crispy. Step 2) Cook your bacon and store it for when you’re ready to add it to your sauce. A Secondz container works perfect to keep it fresh. Step 3) Add butter to a pan and melt it down. Add garlic, followed by milk and Parmesan. Let it all come together and hit it with the rest of the rub and the bacon. Step 4) Get your wings and cover them in the sauce. Topping with more bacon for extra protein and chives for our daily vitamins.
